Salted Chocolate Dipped Peanut Butter Cookies (Vegan)
We all need a go-to peanut butter cookie recipe that we can run to when that sudden & intense urge for peanut butter cookies sets in.
Well, we have finally found ours! Of course, it’s 100% vegan and you 100% can’t tell the difference! It’s not too sweet, but still holds that rich peanuty taste we all love .. add chocolate dip (or drizzle)…a crunch of almonds…and a sprinkle of salt to your masterpiece!
Looking for a chewy peanut butter cookie? Bake yours until they are just beginning to brown and remove immediately! (10-15 minutes depending on your oven)
If you are a crunchy peanut butter cookie fan like us, just keep them in there until they are as golden brown as you like ’em 🙂 We recommend 15-20 minutes.
Ingredients:
1 2/3 cup organic all purpose flour
1/2 tsp pink Himalayan salt
1 tsp baking soda
1/3 cup organic virgin coconut oil, solid
2/3 cup organic cane sugar
1 tsp vanilla extract
1/3 cup almond/cashew/hemp/rice milk
3/4 cup crunchy or smooth peanut butter
1/2 cup almond butter
3/4 cup non-dairy chocolate chips
1/4 cup raw almonds
Directions:
- Preheat oven to 350 degrees.
- Mix flour, salt & baking soda in a bowl and set aside.
- In a separate bowl whisk together solid coconut oil, sugar and vanilla until combined. Add non-dairy milk and peanut butter and continue to whisk.
- Slowly add dry mix to wet and mix as you go, until all ingredients are combined.
- Form dough into golf ball sizes, flatten the ball in your palm or against the table.
- Place on cookie sheet and press into the dough with a fork to make criss-cross impressions. (I added a dollop of peanut butter on top of the cookies I drizzled w/ chocolate – this one is for you peanut butter addicts out there!)
- Place on the middle rack and bake until desired crunchiness. Here are some cookie tenderness guidelines. Soft: 10-15 minutes. Crunchy: 15-20 minutes.
Chocolate Dip:
- Add chocolate chips to a bowl that will fit on top of a small pot. Fill pot with water and place on high heat.
- Place the bowl of chocolate chips over the pot. As it heats the steam will melt the chocolate.
- Dip cookie in the chocolate or use a spoon to smear the chocolate on by hand, it easier to handle this way.
- Sprinkle with chopped up almonds and a dash of salt!
